Vegetable Soup

A healthy, low fat, low cost recipe. 

Total Cost:  $2.80  Serves:  4 at $.70 per serving.


  • 16 ounce package of frozen stir fry vegetables
  • 2 Tablespoons chopped onions
  • 3 beef bouillon cubes
  • 1 1/2 teaspoons garlic, minced
  • Creole seasoning
  • Chili powder
  • Olive oil spray
  • 8 ounces tomato sauce
  • 16 ounces of chopped tomatoes
  • 1/2 Cup of Mexican style chili beans

Directions to Prepare:

  • Spray 3 quart sauce with olive oil spray
  • Sauté garlic and onion until onions are tender
  • Add in vegetables and continue stirring until well mixed
  • Stir in chili beans, tomato sauce and chopped tomatoes; bring to a boil
  • Season to taste with chili powder and Creole seasoning
  • Simmer until vegetables are tender



Salad Tip: Make a radish rose by cutting through the first layer at several points around the radish then peel peel back sections, leaving a white center.
