Bean Salad

A healthy, low fat, low cost recipe. 

Total Cost:  $10.00  Serves:  4 at $1.50 per serving.


  • 16 ounces green beans, drained
  • 8 ounces of kidney beans, drained
  • 3 green onions, chopped
  • 1 6 ounce jar of marinated artichoke hearts
  • 1/2 medium red onion, chopped
  • 1/2 medium red or green pepper, diced
  • low fat or fat free Italian dressing

Directions to Prepare:

  • Combine green beans, kidney beans, onions, and peppers in a large bowl.
  • Stir in artichoke hearts and Italian dressing.
  • Chill a minimum of 10 minutes, overnight is better.
  • Serve on a bed of lettuce if desired.



Salad Tip: Make a radish rose by cutting through the first layer at several points around the radish then peel peel back sections, leaving a white center.
