Pumpkin Bars

This is a tasteful treat for your Sunday School class or bus route.

Total Cost:  $7.20  Serves:  24 at $.30 per serving.


  • 1 spice cake mix, dry
  • 1 1/2 cup butter
  • 3 large eggs
  • 1 cup canned  pumpkin
  • 1 cup sugar
  • 1/2 cup pecans, chopped

Directions to Prepare:

  • Preheat: Oven at 350 degrees.
  • Reserve: 2/3 Cup dry spice cake mix.
  • Combine:  Remaining dry spice cake mix, butter, and 1 egg in large bowl, mixing well.
  • Pat:  Mixture into well greased 9x13 cake pan.
  • Bake:   350 degrees for 15 minutes.
  • Combine: Reserved dry spice cake mix, pumpkin, sugar,  and 2 eggs.
  • Beat:  Medium speed for 1 to 2 minutes.
  • Pour:  Over partially baked layer.
  • Top: With nuts
  • Bake:  350 degrees for 15 to 20 minutes until set.
  • Cool:  At room temperature, cut into bars and refrigerate.



Baking Tip:  Cracks and uneven surface of a cake may be caused by too much flour, oven temperature too hot, or oven not completely preheated.
