Chicken Supreme

A healthy, low fat, low cost recipe. 

Total Cost:  $8.00  Serves:  4 at $2.00 per serving.


  • 4 chicken breasts, skinless and boneless
  • 1 cup of 99% fat free chicken broth
  • 1/4 cup onion, minced
  • salt
  • lemon pepper
  • season salt
  • fat free butter spray
  • 2 Tablespoons lemon juice
  • 2 Tablespoons spicy mustard
  • 1 Tablespoon Cornstarch

Directions to Prepare:

  • Sprinkle both sides of chicken with lemon pepper and salt and cook on the grill until juices run clear.
  • While chicken is cooking:
    • Sauté onions in butter spray until tender.
    • Pour in chicken broth, lemon juice, and spicy mustard.
    • Cook over low heat, meanwhile make cornstarch mixture (mix cornstarch and cold water until smooth in separate bowl).
    • Bring gravy mixture to a boil, then stir in cornstarch mixture.
    • Continue stirring gravy until is reaches desired consistency.
    • Remove from heat and cover to keep warm.
  • Serve gravy over grilled chicken.



Meat Tenderizing Tip: 1/4 c vinegar, 2 T oil and spices of your choice (Italian dressing works good) with meat in a sealed bag for a minimum of 2 hours.
